Breakfast of Champions

7:03 AM. Dawson Park.

Jeff Hosea and I cut across the dewy grass on our bikes to a small white tent set up on the northwest corner of the park. There stands an apron-clad Jacob Lupton, spatula in hand, gently coaxing whipped eggs into the maw of a heavily buttered cast iron pan. Red and green peppers, mushrooms, and caramelized onions slowly saute on his array of gas burners, their savory smells wafting into the crowd of SERA bike commuters who have stopped by for their breakfast on the way to work.

The Omelet Meet-Up was the brainchild of Jacob, who challenged his colleagues to host similar events during the Bicycle Commute Challenge, a month-long BTA program that educates and celebrates bike commuting. The 20 or so folks who showed up were really impressed with Jacob’s “egg”ceptional talent and started brainstorming about other meet ups.

  1. Big ovation for Jacob!

    I’ve done bike commute challenges with previous firms in Tucson, Phoenix, Fort Collins and Denver…but this was definitely the best food available at any of them. Very impressed.
